with Meadow Creek Chicken Cookers

We believe that perfectly grilled chicken should be a guarantee, not a gamble. Meadow Creek’s unique “chicken flippers” use innovative, rotating double-sided grates and precise airflow to deliver tender, moist, and smoky chicken with that perfectly crispy skin every single time. Whether you are cooking for your family or feeding hundreds at a fundraiser, we’re here to help you master the art of the fire.

The Preppin’
- Dump charcoal into the pit, mounding it in the middle. Light the center of the pile with a weed burner torch. (If using lighter fluid, squirt 1/2 bottle over the charcoal, wait 5 minutes, then light it in several spots with a match or lighter. Using a torch avoids the harsh flavor of the fluid.)

* Using Royal Oak Chef’s Select Charcoal Briquettes, an all-natural charcoal with no added fillers.

- Open the chicken flipper grate on a table and spray it with cooking spray. Arrange the chicken on the grate and season one side with a 50/50 blend of Meadow Creek Barbecue Rub and Meadow Creek Zesty Rub. Close the grate, flip it over, and season the other side. Let the chicken set on the table for about 15 minutes, or until the fire is ready, before placing it on the grill; this helps to achieve deeper flavor.
- 20-30 minutes after lighting the charcoal, when it is turning white around the edges, spread it out evenly in the pit and add several Pecan smoking wood chunks.
The Grillin’
- Place the loaded grate on the grill and cook away! The key to tender, moist chicken with crispy skin is flipping it frequently over a hot fire. (optimal pit temperature is 375°-400°) Start out turning the grate every 5-10 minutes and keep increasing the frequency. By the time the chicken is finished cooking, you’ll want to be flipping it several times per minute.
The Homestretch
- When the chicken reaches the desired temperature (see chart below), remove it from the grill and put it in a foil-lined, insulated cooler. Top it with more foil, shut the cooler, and let it rest for 30-60 minutes before serving. This greatly improves the flavor and moisture content of the meat!
